I am a true oatmeal cookie monster... I only counted, as well as January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? They are a few of the most popular recipes on my site cause they taste really sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they contain no refined sugar or bread!

That means you're going to begin with whole wheat flour (or fermented, if you prefer) and prompt oats (like these... or those for a gluten-free edition!) . Immediate oats are smaller and thinner than conventional rolled oats, also you can see them in canisters right alongside those classic oats at the grocery shop.

I probably sound like a broken record by now... But cause I ? you and want your cookies to flip out totally plump and soft, I am reminding you ... Measure your yogurt and bread properly, applying this technique or a kitchen scale! (? That is the one I have and adore. Too much of either side will make your biscuits taste cakey or dry, instead of chewy. This is especially true of this oats--that they act like little sponges and soak up lots of moisture out of the cookie dough!

See these bananas? And all of those brown stains? If it comes to baking with bananas, brown = amazing! I ? additional speckly bananas cause they have a lot bright, bold flavor--along with extra sweetness! That is the minimum amount of brown that I suggest. More is even better!

The rest of the cookie dough's sweetness comes from another natural ingredient... Pure maple syrup (like this!) . You want the sort that comes directly from maple trees, which is normally sold in sparse glass bottles or squat, round plastic jugs. Skip the pancake sugar and sugar-free syrup!

The peppers include even more natural sweetness! The freshly bought, additional plump, perfectly tender ones are perfect... But for those who have old, somewhat dried out carbohydrates (hmm... it seems absurd to describe dried fruit as dried out! ) , that is fine!

Just add them to a microwave-safe bowl, and pour water on top till they're totally coated. Seal plastic wrap across the surface, and then microwave the bowl on high for 1 minute. If you let the peppers sit while mixing together the cookie dough, then this small hint hydrates them they're tremendously juicy--and that makes a significant difference in these cookies as soon as they're baked!

Yields: 15 biscuits

The recognizable cozy spices and plump blueberries make these much more irresistible. They'll keep for at least one week if stored in an airtight container in the fridge --if they last long!


1 cup (100g) instant oats (fermented if essential and measured like that )

3/4 cup (90g) whole wheat or fermented * flour (measured like that )

1 1/2 tsp baking powder



1/4 teaspoon salt



1/4 cup (63g) mashed banana

1 tsp vanilla extract



1/4 cup (40g) raisins

In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add in the flour mixture, stirring only until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.

Preheat the oven to 325°F, and line a baking Going Here sheet with a silicone baking mat or parchment paper.

Using a spoon and spatula, dip the cookie dough into 15 rounded scoops onto the prepared sheet, and apply to the desired thickness and width using 100 Healthy Cookies - Cooking Light a spatula. Bake at 325°F for 10-12 minutes.

Notes: It is extremely important to measure both the oats and flour properly utilizing this method or even a kitchen scale. (? That's exactly the one I own and enjoy!) Too much of either can dry out the cookies and render them cakey rather than chewy.

Immediate oats are also known as quick-cooking or moment oats. They come in huge canisters, just like conservative oats. They're not the ones at the tiny flavored loaf of bread. To make your own, include the same amount of conservative oats to your food processor, and pulse 10-12 times or until the oats are approximately 1/4 to ? of their initial size.

For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, 2 tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (such as that one!) Will also work, if measured like this.
